I bought a slow cooker about a month ago and so far, I'm loving it. I've made chili, chicken noodle soup, shrimp creole, chicken thighs, and pulled chicken among other things.
My favourite recipe so far is the bone-in skinless chicken thighs. I just line the bottom with rough chopped onions, celery, carrots, and mushrooms and then put the thighs on top. Put some salt and pepper right on the thighs and then add about 375-500ml of your favourite BBQ sauce. I like to add worcestershire, dijon, and maple syrup as well, but feel free to just leave it the way it is. Cook on low for 4-5 hours.
The best part is the potatoes. Rough chop your favourite potatoes (I like Yukon gold) and put into a small casserole dish. Take a couple ladles full of the sauce from your chicken and put it in the dish with your potatoes and cover in casaer dressing. Put it in the oven on 400 for about 30-45 mins, stirring several times and just put it on broil for a couple minutes to finish.
Top the potatoes with the veggies from the bottom of the slow cooker and a dollop of sour cream and voila.
Easy, cheap, and tasty as Hell.
