    Burger Recipes

    Inspired by SATW, I'd like to hear what you guys have to offer in the way of burger recipes. I'm always up for trying new ones.

    Here's what I usually do -

    Start with grade A lean ground beef,

    toss in whatever spices you have in the kitchen - worcesterchire sauce, minced onions and garlic salt are key, but I've also tossed in dill, tex mex, hot sauce, beer, montreal spice, oregano, smokey stampede, any of your favourite spices or sauces really.
    I've never made the same burger twice, only because I don't measure anything or use the same ingredients twice.

    make into patties,
    press top of patty with thumb (this is key, it prevents the patties from rounding)

    Cut a nice think slice of Cheddar and garnish with favourite toppings.

    That wasn't much of a help in the way of a recipe, but I'd love to hear what you guys have to offer and I'll try it and maybe even rate it.

    No recipe yet, but a tip. I used to do the thumb indent thing, but I found out something that works better for not only the bubble thing, but also even temperature.

    First I mold the patty using something similar - but cheaper - than this;



    It's fast, and makes a consistent thickness. Then, I take a chop stick, and poke about a 1/4" hole in the middle of the patty. It prevents the bubble, and because the heat gets to transfer through the middle of the patty, It allows for an even doneness throughout the patty.

    Grilled avocado blue cheese burger.

    I usually just make plain burgers with a little salt and pepper, cheddar cheese, slice o red onion, lettuce tomato. Classic burger, but once and a while, I'll want to change the pace.

    This one my wife likes a lot.

    Meat.
    proportions for 2lbs.
    You can go with salt and pepper, but for this I add
    1/3 cup minced sweet onion
    2 tablespoon minced herb (fresh basil, oregano, thyme)
    Tabasco - to your liking I use about 6-7 shakes

    Caramelized Onion:
    mix together
    1 large sweet onion thinly sliced
    Tabasco - again to your liking for this I use only about 3-4 shakes (the wife is not a hot fan)
    1 Tablespoon balsamic vinegar
    1 Tablespoon EVO (extra virgin olive oil)
    1 Tablespoon minced garlic
    1 Tablespoon brown sugar.
    Place into a skillet on medium, and cook stirring occasionally, until the onions are caramelized and most of the liquid is evaporated.

    Spread:
    Combine
    6/12 ounces of herb cheese spread
    4 oz of blue cheese. (alter proportions as to your taste, I like more blue cheese than herb)
    Place in a sauce pan and simmer until a spreadable cheese consistency.

    Kicker: Grilled Avos
    Take some sliced avocados and sprinkle them both sides with balsamic vinegar, salt, and pepper.
    Make sure your grill top is clean and oiled, and grill the avo slices. A little tricky but worth is. I could eat them as a snack.

    Grill your burgers to your liking, and grill your buns. Then take the blue cheese spread and cover the insides of the buns, place your burger on the bottom bun, top with grilled avos, and caramelized onion.

    Top with Lettuce and tomato if desired.

    Messy, and delicious.

    Mix ground sirloin and ground spicy sausage together in a bowl with some chopped onion and a little salt and pepper. Grill it up and put a slice of muenster cheese on top.

    I usually don't buy ground beef when I make burgers, but when I do I use ground chuck 80/20. You need a little more fat for a better flavor. Using a leaner ground meat like buffalo, deer or elk or a combo of the two, I do what you do. I mix in Hot Italian or Chorizo sausage for the fat and the flavor.

    Use whatever cheese you like.

    I don't use measurements when I mix this together, but this is how I season it.

    Dill Weed, Cayenne Pepper, Salt, Tarragon, Pepper, Chili Powder, 1 Clove of garlic (or garlic powder), chopped onions (or onion powder).

    I mix that into the meat, stick a ball of fresh mozzarella cheese in the middle and grill.

    That mix is also awesome for a rib dry rub.

    I tried making some blue cheese burgers the other day. I usually just use what's around, but here's what I came up with:

    1 Tbsp Dijon mustard
    2 cloves minced garlic
    2 green onions, chopped
    2-4 oz crumbled blue cheese (get Pt. Reyes blue cheese if you can find it)
    1 egg
    Salt and freshly ground black pepper

    Yum
