Makes 6-8 servings
1/3 cup all-purpose flour
2 teaspoons salt, divided
1/2 teaspoon black pepper
2 pounds beef top or bottom round, cut into 1/2-inch chunks
4 tablespoons vegetable oil
2 medium onions, cut into 1-inch wedges
1/2 pound fresh mushrooms, sliced
1 (10-ounce) package frozen mixed vegetables
1 cup ready-to-serve beef broth
1/2 teaspoon garlic powder
1/4 teaspoon ground red pepper
1 teaspoon browning and seasoning sauce
1 (12-ounce) package refrigerated buttermilk biscuits (10 to 12 biscuits) 1. Preheat the oven to 375°F. Coat a 9" x 13" baking dish with nonstick cooking spray.
2. In a medium bowl, combine the flour, 1 teaspoon salt, and the black pepper; mix well. Add the beef chunks and toss until well coated.
3. In a large skillet, heat 2 tablespoons oil over medium-high heat. Add the beef chunks, reserving the flour mixture. Sauté for 3 to 4 minutes, or until the beef is slightly browned.
4. Add the remaining 2 tablespoons oil to the skillet; when hot, add the onions and mushrooms, and sauté for 4 to 5 minutes, or until the vegetables are tender.
5. Add the remaining ingredients except the biscuits and reserved flour mixture; cook for 3 to 4 minutes, or until heated through. Stir in the flour mixture and cook for 1 to 2 more minutes, or until slightly thickened. Pour the beef mixture into the baking dish. Place the biscuits over the meat mixture.
6. Bake for 16 to 18 minutes, or until the biscuits are golden.

Do you have Buffalo wing soup? I also make a mean Buffalo chicken balls (hehehe) and Buffalo chicken lips. Buffalo wings on the grill are a healthy alternative to deep fried wings.

That is exactly the kind of thing we are looking for! We want a lot of 'regional cuisine' to make our cookbook different from the run-of-the-mill versions. Any recipes you wish to share, we'd love to print. You can either post them here or you can email them to me at hockigirl77@aol.com.
The Buffalo Chicken Wing Soup is good -- I never made it, but they serve it at Danny's near the stadium and I've had it there. If you have a recipe for it -- I'd love to print it. Also, not sure what the other dishes are, but they sound intriguing to say the least! Submit away, please. :n4clapping:

My chicken balls are actually really simple.
Get ground chicken and roll them into small balls, I'd say the size of small meat balls.
Brown them in a skillet by rolling over a medium heat until brown.
I then get a bottle of franks and cover the bottom, and then some, of a pot, with sauce. Put the heat on low and toss your balls in! Ha! When the sauce starts to cook, take the pot and your balls off the stove and pour them into a bowl. The more sauce you have in your pot the hotter the balls will be.
Depending on the amount or size of your balls you can use tooth picks to serve them with or let your friends pick em with their grubby fingers. I serve Maries Bleu cheese and celery with em! Fantastic and different not to mention very easy to do.
I usually make my Chicken lips when I do my chicken balls, it makes for fun eating!

The Lips are also very easy to do, I guess you can see I like simplicity. :)
If I serve the Lips and Balls then I use one chicken breast for two people, if no Chicken balls are being served I use one breast per person.
Make sure you get a package of fresh skinless boneless breasts, not frozen as we cook them on the grill. Take as many breasts as you want, turn on the bar b q grill and cook over a medium to low heat until the meat is no longer pink, usually less than 10 minutes. I usually cook on a low heat as it keeps the breasts very very moist. While cooking I sometimes brush some Franks hot sauce on the breasts to start the flavoring process, pour sauce into a bowl and brush it on both sides reapplying to both sides as you cook and flip. Depending on you, this may be all the hot sauce you require, if not, read on...
Once the breasts are done bring em to a flat surface and cut the breasts into strips of chicken meat. What we're trying to do is make 3-5 inch strips of meat. I have a pot with more franks in it on a low heat, what I do is throw a handful of Lips (strips) in at a time and keep them in the pot for 15 seconds or less or even more, depending on how hot you want them to turn out. The longer they're in the pot of franks the hotter they'll be.
Once done, serve with your chicken balls on a large party tray with Bleu cheese and celery and let everyone know that the chicken lips and balls are ready. Be sure and have a few cold brews around, you may leave them in the pot too long for the first batch or two.... HOT! but very good and made without deep frying in oil!

I've been trying to do heart healthy cooking lately. I do my wings on the grill too and they come out juicy on the inside and crisp on the outside.
Bag of frozen or thawed wings, I do thawed. Place em on the grill over a medium low flame. Turning every 2-3 minutes I baste them with hot sauce or bar b q sauce, they develop a great taste on the grill! I keep a bowl of warm franks on the table to pour over the cooked wings, this way the person can add as little or as much as they like. You can also do these in an oven, same result, awesome!

SG, they do on a old day, too bad that the wind is at 45mph outside. lol Do you have an indoor grill? They work pretty good too.
Here's a quickie, if you have people coming over and you want to serve a hot chip dip take some Velveeta spicy cheese and some medium to hot salsa, put both in a crock pot on low heat. You want the dip to be creamy, not runny or too thick as it breaks chips, lol.
(I use 1/2 of the block of cheese to 3/4 to a full jar of salsa the 12oz jar. If you have 6+ people over use the full block of cheese to a full large jar of salsa. ).
Stir it often and add salsa as needed. Serve with some mexican restaurant style tortilla chips.

Thanks SG. When I have friends over I want to spend time with them, not cooking. So I try and do things easy and fast and lately healthier.
The range top of grill will work for you, I've used one. :)

Hey Bills Man: Found a recipe for Chicken Wing Soup and made it the other day. OMG is that good! The recipe wasn't the best so I had to change it around, but the basics were there and it was damn good.
Next up is the (grilled) BBQ wings that I still haven't made yet; still jonesin' for those. Noticed that Ninos has them on the menu, though. Could be a plan for this weekend...
